Taste is enhanced by ingredients such as salt, sweeteners, and fat as they increase the ethnic flavors of the product. Most of the consumers who lead hectic lifestyles tend to buy food and for such consumers, safety of food becomes priority. They look for convenient food with nutrient content and clear labelling enabled on the product which help the consumers to make best choice. Young consumers tend to spend more on the premium products that are made with best ingredients. Manufacturers need to provide the best quality using better ingredients to command premium price on the quality product offered. An increase in the per capita income is expected to significantly stimulate the food expenditure. The expenditure on away from home food is gradually increasing which comprises 50.1% of the total food expenditures. In-store bakery products in grocery and retail stores are increasingly becoming popular with the availability and convenience of purchasing. In emerging economies E-retail stores are creating a buzz in the industry with the convenience of availability just a click away. They require baked products with more shelf life. The shelf life of the baked product is determined by packaging, chemical composition and freezing. Shelf life can be increased by increasing the appropriate chemical composition with ingredients such as salt content, adding glycerol, increasing water, reducing sugar content in the flour. Glycerol as food additive can help maintain the moisture content in the environment. Salt has the property to reduce the free water available for microorganisms to grow. Packaging is one of the vital parameters in increasing the shelf life of baked products which are fragile, light, and low resistance to fungus. Due to environmental regulations, many of the companies are enforced to use packaging materials that are free from chemical additives. In this context, complying to the environmental regulations using ecofriendly packaging material becomes relevant. Use of Chitosan-based composite film as packaging material which can slow down growth of fungi thus increasing the shelf life of baked goods is getting immense response. Innovative methods are developed by many manufacturers that maintain the freshness of the product throughout the extended shelf life. They have developed baked products that combine freshness and flavor through natural ingredients and enzymes that contain low levels of sugar.

Restraint: Stringent regulations against the use of PHO-based shortenings

In 2015, the Food & Drug Administration (FDA) introduced a regulation that Partially Hydrogenated Oils (PHD) based shortenings are no longer considered as safe. By this regulation, from 2018 no food product should contain PHO based shortening. This regulatory shift might affect the market as large numbers of PHO based shortenings were used to prepare bakery products. Partially hydrogenated oils are formed through industrial process by adding hydrogen to vegetable oil. PHOs are primary source for artificial trans fats which help the baked goods to remain solid in high temperatures. The action was taken by U.S. Food and Drug Administration to reduce coronary diseases in the U.S. PHO based shortening is used to extend the shelf life of baked goods. However, PHO is linked to heart diseases in humans, because of its trans fats content in the oils. These oils are traditionally used in doughnuts, crackers, coffee creamers and frozen baked products. Companies had to face significant technical challenges in finding suitable alternative to some tailored shortenings under the compliance period of 3 years.
